1. Shuck beans and discard pods.
2. Option: Blanch beans in salted water for 3 minutes; drain, cool, peel off skins.
3. Sauté beans in a drizzle of olive oil and a handful of chopped garlic scapes
(or green onion or a garlic clove). Serve as is, or add to any pasta dish.
