Tomato Pie

4-5 Tomatoes
1 prepared Pie Crust
1 8-oz bag of shredded Mozzarella Cheese
2 Tbsp fresh chopped Basil
Salt and pepper
Olive Oil

Put pie crust in pan. Sprinkle all but one small handful of cheese onto crust. Sprinkle chopped basil over the cheese, then lay on sliced tomatoes. Sprinkle with salt and pepper and top with the remaining cheese. Drizzle up to 1/4 cup of olive oil over the pie.

Bake at 350° for 30-40 minutes, keeping an eye on the crust. The pie crust edges can be covered with foil before baking to prevent burning. Remove the foil during the last 10 minutes.
